This is probably my first food post in almost three years of this blog's existence. I just could not help myself share the recipe of this snack/meal that was served to us by Kel while we were in Paitan Cove. Although, we are in this luxury-lacked cove, it does not mean that we have to deprive ourselves of sumptuous meal, so this meal really is a welcome treat to us.
I have watched Kel prepare this and let me just share it to you:
For the ingredients:
3 tbsp olive oil
1/2 cup squid cleaned & cut to rings
1/2 cup shrimps peeled and deveined
1 cup mussels
4 cloves garlic, minced
2 tbsp sun-dried tomatoes
1 cup tomato sauce
500g penne pasta, cooked
parmesan cheese
chopped parsley
salt and pepper
How to cook this:
Heat olive oil and saute the garlic. Add the seafood one at a time. When cooked, add the sun-dried tomatoes and tomato sauce. Season with salt and pepper. Simmer about 5 minutes then add cooked pasta and mix. Upon serving, top it with parmesan cheese and chopped parsley. Enjoy.
