Mention Bicol Food and one will definitely come-up with "spicy". And why not? Its most popular draw, the Bicol Express is just too hot to handle with chopped siling labuyo as its main spice. But hey, like what the Bicolanos say, you have never been to Bicol unless you have tasted Bicol Express.
Bicol Express is made up of pork, peppers and coconut milk as its main ingredients, some vegetables and condiments are added such as bagoong, fish sauce, beans and others depending on the cook. Peppers used can be siling labuyo, long chili or jalapeno peppers. One thing for sure, it is one hot dish.
Other than the popular B E, Bicol food stable includes Pinangat and Laing made up of Taro leaves and coconut milk and spices. In fact, I think most of the food there in Bicol have sili and coconut milk in them making the most common Filipino dish to a truly Bicol specialty. Here are some photos. Enjoy!!!
